Poncho's Pancakes follows Poncho the horse on his journey of planning a special birthday surprise for his friend Luna! This book was written by Jubilee Gallegos, a 10-year-old volunteer from Oaks Restorative Ranch, and was illustrated by Abby Bouter age 15. Jubilee has been volunteering at Oaks Restorative Ranch for two years and hopes to start her own horse ranch some day! Abby can also be found on Redbubble at abbiethesnail and through her business called Charms.

Stories from Oaks Restorative Ranch are stories that are told by children, youth and adults who have participated in some way at the nonprofit. These are real and pretend stories full of fun, full of hope, and full of healing. We hope you enjoy reading about the experiences of our staff, clients, and volunteers through these stories. Any money raised as a result of these stories goes right back into helping people, horses, and the community walk through their journey of healing.

ABOUT THE NONPROFIT: Oaks Restorative Ranch is a 501(c)(3) nonprofit organization that pairs horse rescue, rehabilitation and care, with mental health services for children, youth and adults. We offer sessions that help people work through past and present struggles and help them develop life skills like trust, communication and boundaries. Our mission is to walk through healing with individuals, honor and value horses who have been left behind, and to act as a catalyst for restoration in the community! Sessions are always free to allow access to mental care services for those who might not be able to afford them otherwise.
